HISTORY

In Quechua it's name is Kashamarka, that means 'village of thorns'; and was founded by San Antonio; in northern Peru, capital of the Department and the Province of Cajamarca, located at 2720 m in the Cordillera de los Andes, in the mountains north of the country.



Cajamarca was inhabited before the Inca era, during this era was a major population center. In 1532, was the capture of Atahualpa during the Conquest of Peru.Cajamarca is known for its popular culture, among which highlights the celebration of carnival, as well as his important production of dairy products.

In Cajamarca we can find:




-The churches of San Francisco and the Recoleta.




-At the east of the city, lies the district of Baños del Inca, famous for their thermal waters where the Inca used to bath, and also because here we can found the windows of Otuzco, where the ancients used to burry their deads.





-The cathedral was built in the seventeenth century with the name of Santa Catalina, was made of volcanic stone with images of Santa Rosa de Lima, San Martin de Porres and La Virgen del Carmen mainly in the interior. Here we can find Santa Apolonia's hill, which is a natural lookout point, where you can overlook all he city. At the top is a small white chapel dedicated to Virgen de Fátima.

DISHES


-The best known are the spice of Cajamarca-style guinea pig, chicken broth, quinua soup, caldo verde, humitas, etc.



- Picante de papa con cuy frito: guinea pig stew cooked in peanut sauce and red pepper sauce with potatoes.

- Chicharrón con Mote: pork cooked in its own fat and accompanied by corn or maize kernels.

- Humitas: ground corn fresh or salt stuffed with cinnamon and raisins, wrapped in corn husks and steamed.

- Caldo verde: soup potato with herbs from the region.

- Cajamarca is a milky area, which distributes the domestic markets for the manufacture of dairy products like yogurt, cheese, butter and ice cream. The milk-based drinks are a delicacy.
